  • 6 ounces pineapple chunks, drained
  • 3 ounces pitted dates
  • 1-1/4 medium carrots, thinly sliced
  • 3/4 orange, peeled and sliced
  • 3/4 banana, peeled and sliced
  • 1 Tbs. plus 2 tsp. honey
  • 2-1/2 tsp. white wine vinegar
  • 2-1/2 tsp. lime juice
  • 1-1/4 tsp. vegetable oil
  • 3/4 tsp. lime zest, grated

Combine first 5 ingredients in a large bowl. Combine remaining ingredients in a jar with a tight fitting lid. Shake vigorously and pour over fruit. Chill until ready to serve.
