Aspic

Aspic is a dish in which ingredients are set into a gelatine, jelly-like substance made from beef, veal, chicken, or fish stock.

When cooled, the stock congeals because of the natural gelatine found in the meat. The aspic may need additional gelatine in order to set properly. Almost any type of food can be made into aspic such as meat pieces, fruits and vegetables.
